Granite vs quartz

Granite is quarried rock; engineered quartz is roughly nine parts ground quartz to one part resin and pigment. Almost every difference follows from that resin. Quartz is non-porous, so it never needs sealing and nothing can settle into the surface; granite has some porosity and takes a sealer, though a modern one holds for years rather than months. The resin is also the weakness, because it scorches — a pan straight off the burner can leave a mark on quartz that does not come out, while granite came out of the ground hot and does not care. The other real difference is variation. Every granite slab is unlike the next, which is either the point or a problem depending on whether you are doing one kitchen or twelve identical units. Quartz is made to a formula, so the slab you approve is the slab that arrives.
